taste of…Powerball Truffles (gluten free, vegan)

Back to back “taste of…” posts, say whaaat!?

I remade this original “Dark Chocolate Dreamy Powerballs” recipe from Brittany over at Barr & Table for a friends’  birthday and had to share. Because let me just tell you, they’re pretty dreamy.

…and simple. and all-natural, gluten-free, soy-free, vegan, and high in protein. yet they taste like dessert. #winning. 

there’s so much goodness in these little bites, that they’re definitely deserving of the name ‘powerballs’, but they’re far more decadent than that. So I find ‘truffles’ to be more appropriate. call them what you want, but make them, just make them.


Powerball Truffles (Dark Chocolate Peanut Butter Coconut Oat)  from Brittany’s original recipe.

makes ~30 1/2 tbsp. balls

- 1/2 cup Dark Chocolate Dreams
- 2 tbsp coconut oil
- 2/3 cup rolled oats
- 1/2 cup vegan protein powder of choice (I used Perfect Fit Protein, which is a brown rice based one)
- 2 tbsp ground flax, 2 tbsp hemp seed *optional. I didn’t have these so I chose to omit them. 
- 2 tbsp chia seeds
- 1/2 cup unsweetened shredded coconut + more for rolling


Scoop peanut butter and coconut oil into a medium bowl and microwave for 20 seconds. Add the rest of the ingredients and mix well until combined.

Refrigerate the mix for 10-15 minutes until it hardens up a bit. This will make it easier to roll the balls. After refrigerating, measure out 1/2 tbsp per ball and roll to shape. Roll balls in remaining coconut flakes and cover. Place each ball on parchment paper, separating each layer with another sheet. Store in an air tight container in the fridge or freezer. I don’t know why I haven’t tried making my own versions of energy bites before but I think these might be the first batch of many.
