2 cps. fresh cut corn from the cob (about 6 ears) or you can use frozen

3 3/4 cups chicken broth

vegetable cooking spray

1 tbsp. veg. oil

1 cup chopped onion

3 cloves garlic, minced

3 3/4 cups 2% milk, divided

1/2 tsp ground pepper

1/4 tsp salt

1/2 tsp hot sauce (or we used old bay)

1/2 cup all purpose flour

1 lb. fresh lump crabmeat drained

garnish: paprika


Combine corn & chicken broth in a large suacepan. Bring to a boil over medium high heat stirring occasionally. Reduce heat and simmer for 20 minutes.

Coat a small skillet with cooking spray; add oil and place over medium high heat until hot. Add onion & garlic; cook, stirring until tender.

Add onion mixture, 3 1/4 cups milk and next 3 ingredients to corn mixture. Bring to a boil.

Combine flour and remaining 1/2 cup milk, stirring with wire whisk until smooth. Add to corn mixture, cook, stirring often over medium heat until thickened & bubbly. Stir in crabmeat. Garnish.

Makes ~9 cups. Serve with vegetable of choice or garden salad, crusty bread or crackers. Enjoy!
